To clarify the difference between conduction and convection, let’s imagine the idea of:
a juicy, fresh piece of chicken from a local butcher & the other a frozen, cheap alternative.
if you cook them both in a quality convection oven for the required times, you don’t have to
be a conisure to notice the difference but if you chuck both pieces on the bbq until charcoaled
you will only taste burnt chicken.
this is the same with the beautiful bean!
